Cream of Tartar (potassium bitartrate) is a dry, acidic powder that is a natural byproduct of winemaking. It acts as a stabilizer, leavening agent, and interfering agent to prevent sugar crystallization in various recipes. 
Its most common uses include:
  • Stabilizing Egg Whites & Cream: Helps whipped egg whites and heavy cream build volume and hold their shape without collapsing (e.g., in meringues and angel food cake).
  • Preventing Sugar Crystallization: Stops sugar syrups from turning gritty, resulting in smoother caramels, frostings, and hard candies.
  • Leavening: When combined with baking soda, it acts as the acid needed to create carbon dioxide bubbles, making baked goods rise. You can make DIY baking powder by mixing 1 part baking soda with 2 parts cream of tartar.
  • Adding Flavor and Texture: Gives treats like Snickerdoodle cookies their signature slight tang and soft, chewy texture.
  • Household Cleaning: Due to its mild acidity and gentle abrasiveness, it works as a non-toxic metal polish (for copper or stainless steel) and an effective porcelain scrub.
