Sumac is a vibrant crimson spice made from the dried berries of the Rhus coriaria shrub. It delivers a tart, lemon-like acidity with subtle earthy and fruity notes. Unlike fresh citrus or vinegar, sumac adds brightness without extra moisture, making it a highly prized dry acidifier.
Flavor & Texture
  • Taste Profile: Offers a clean, fruity sourness similar to lemon juice or green apple, but with a softer, more rounded finish. It lacks heat, instead acting as an "enhancer" that brings out the natural flavors of food.
  • Appearance: A coarse, deep red to burgundy-purple powder.
  • Aroma: Fresh, slightly sour, with wine-like or tea-like floral notes.
Primary Uses
  • Finishing Spice: Frequently sprinkled over hummus, grilled meats, salads, and yogurt dips for a pop of color and tartness just before serving.
  • Dry Rubs: Ideal for meat rubs (especially lamb and chicken) as it won't water down marinades or coat textures negatively.
  • Onion Salads: Massaged onto thinly sliced red onions to draw out bitterness and make them lively and aromatic.
Common Sumac Blends
Sumac serves as the crucial tart component in many popular Middle Eastern and Mediterranean seasonings:
  • Za'atar: A highly popular herb and seed blend mixing sumac with thyme, oregano, sesame seeds, and salt. It is frequently eaten with olive oil and warm flatbread.
  • Shawarma & Baharat: Sumac is often combined with cumin, paprika, and other warm spices to provide a citrusy, cutting balance to rich or fatty meats.
